Plant-based restaurant The Clocktower Bistro to open at Trinity Theatre
It will be headed up by international vegan chef Ben Fuller
Trinity Theatre has announced the opening of The Clocktower Bistro, a new restaurant concept for the cultural hub in Tunbridge Wells (@trinitytheatretw).
The new venture aims to ‘provide wholesome nourishing dishes with sustainable eating at its core’.
Headed up by Ben Fuller, a vegan chef who has travelled around the world exploring regional cuisines and building a diverse repertoire of recipes, the restaurant will be a welcome addition to the town’s growing food scene.
The Clocktower Bistro will be entirely plant-based, with ‘a strong focus on flavour, creating great dishes that just so happen to be vegan and are sure to delight even the most ardent carnivore’.
Fuller studied with the Plant Lab Culinary Academy, founded by world leading Californian-based chef Matthew Kenney, then attended London’s Vegan Chef School of Excellence.
Having completed masterclasses in herbology, baking and fermentation, he went on to work with Michelin Star chef Alexis Gauthier at Gauthier Soho.
The new Clocktower Bistro’s focus is on creating a casual lunchtime dining experience at Trinity, where classic dishes are served with a twist and sustainability is always at their heart.
The reimagining of the existing Kitchen and Bar will be completed in time to open on 6th September, updating the space to reflect the new ethos while maintaining its welcoming atmosphere.
