Chantelle Nicholson of Apricity heads to Deal




Ruth Leigh and Oli Brown of Updown Farmhouse in Deal will continue their guest chef series in collaboration with Chantelle Nicholson of Michelin Green Starred Apricity on Friday 15th March.

As one of the leading female voices in the UK’s hospitality industry, Chantelle is an advocate for seasonality and sustainability, championing veg-forward cooking.

Chantelle will bring the Apricity - based in Mayfair, London - ethos of a circular economy to Updown, using sustainable produce at the height of the season from local small-scale farmers, makers, growers and foragers to champion Chantelle’s low waste approach to cooking. 

Chantelle’s menu will kick off with kimchi fritters and coriander mayonnaise gougères, as well as miso roasted cabbage, wild garlic, miso aioli and crispy chickpeas. Next up will be slow roasted LAM farm mutton, zhoug, labneh roast potatoes, brown butter and BBQ leeks and to finish, Chantelle’s signature chouxnuts with rhubarb and double cream. 

Tickets can be purchased via the Updown website for £70 and will indulge a welcome cocktail.
