Michelin-trained chef launches Ramsgate pop-up

A Michelin-trained chef who cut his teeth with some of the best is popping up in Ramsgate with a new restaurant offering

Michelin-trained chef Jack Hancock is launching pop-up restaurant Hearth at Ramsgate’s Empire Room next month.

The culinary talent has recently left the fold of Adam Byatt in London, chef proprietor of Michelin-starred Trinity, Upstairs and Bistro Union.

Hearth launches on July 6 and will offer guests modern British dining, serving seasonal, fresh dishes where local produce takes centre stage. 

"We want to keep it real and grounded, cooking on the bone and over coals,” Hancock says.

“It’s all about being fresh and seasonal, showcasing the best of Kentish produce.

“It’s British themed but I’ve worked with Asian cuisine and so there will be a bit of that influence there, too.”

Diners can expect starter dishes such as Kentish crab and seaweed crumpet or guinea fowl terrine. Mains include brill on the bone, wild fennel and kelp butter fondant potato and roast pork shoulder with coco beans and green sauce.

Hancock has spent three years working for Byatt, one of the most respected names in the industry and renowned for his love of seasonal British food.

Byatt says he’s sure the people of Kent will love what Hancock puts on the table at Hearth.

“Jack’s had a great journey with us and it’s wonderful to see him give it a go,” he added.

Before training with Byatt, Hancock cut his teeth in some of Manchester’s best restaurants, alongside the likes of acclaimed chefs Aiden Byrne and Mark Prescott. 

James Thomas, owner of The Empire Room and sister restaurant Little Ships, says he’s delighted Hancock is embracing the opportunity to open his own pop-up in the town.

“It will be exciting to see what Jack brings to Ramsgate,” he added.

Hearth will open for six months in the dining space beneath the Royal Harbour Hotel on Ramsgate’s Westcliff.
