Chef Julian Ramirez is bringing a taste of Spain and Latin America to Dover with the launch of his third Rico Sabor tapas restaurant, set over two levels and offering views of the castle from a large roof terrace.

It started with the takeover of an old prison in Gravesend, where Rico Sabor was born.

Then, almost three years later in 2019, it was a launch in a former convenience store in Rochester for the second restaurant.

Now, executive chef and owner Julian Ramirez is bringing his fusion food to Dover, in a new stand-alone building set over two levels and with a roof terrace with views across to the castle.

Located in the new St James’ Leisure Park, fit out works will be commencing shortly.

Once open, it will be his third restaurant, offering a fusion of Spanish and Latin American dishes, from tapas, paella and authentic Mexican and Peruvian dishes, to wines from Catalonia, central Spain and Valencia.

Another restaurant site is planned to be launched in the autumn in Kent, although details of where are yet to be released.

AS Retail, which represents Rico Sabor and negotiated the new site, says the Dover spot will be over 4,500sq ft and will offer an “electric and lively” atmosphere, like that in Rochester and Gravesend.

Director of AS Retail Andrew Shepherd says they are delighted to have secured the new site for Rico Sabor.

“The views of the castle are unrivalled and this will be an exciting addition to the catering and leisure offer in Dover,” he added.
